If done right, few fish dishes taste better than smoked fish in groundnut paste.
1 fish, smoked
Soak and debone the fish.
Boil the bones in one litre of water for 30 minutes.
Drain and use this water to make groundnut sauce.
Chop the onion and tomatoes. Fry the onions, add the tomatoes.
When ready add the fish and cook for five minutes.
Pour in the pre-cooked groundnut sauce.
Best served with cassava or potatoes.
