Right Cook – Soya Flour Cake

300g baking flour

100g soya flour

200g sugar

100g margarine

125ml milk or water

2 eggs

2 teaspoons (level) baking powder

18 – frac14 teaspoon salt

1 teaspoon vanilla essence


Sift all the dry ingredients together

Rub the margarine in the flour

Make a well in the flour

Beat the eggs, add the milk

Pour in the well and blend well adding a little more milk if necessary to make a dropping consistency.

Pour into a greased 10 inch pan

Bake at moderate heat for 30-45 minutes


Use simsim or groundnut paste instead of soya flour
