Few culinary delights compare to a well-dried piece of meat cooked right.
So knock yourself out in the kitchen with a stew made of this.
1 kg steak
frac14 kg potatoes
1 tblspn fat
1 12 c thin coconut milk
1 chopped sweet pepper
1 c thick coconut milk
4 chopped tomatoes
Juice of 1 lemon
1 tsp curry powder
Cut the meat into thin strips, salt them well and dry them in the sun or under a very low grill fire. Heat the fat and fry the onion until soft. Add the pepper, tomatoes, curry powder and cook for a few minutes. Add the meat, potatoes, seasoning and the thin coconut milk.
Cook until potatoes and meat are tender. Pour in the lemon juice and the thick coconut milk. Lift the stew constantly until the coconut milk is cooked. This prevents the stew from curdling. Serve immediately.
