Coconut, whichever way you choose to use it, is an ingredient capable of turning a formerly dull meal onto its head.
Easily accessible in good supermarkets, find it and make your coconut rings.
frac12 kg flour
1table spoon baking powder
frac14 g butter
frac12 teaspoon vanilla essence
frac12 cup sugar.
Sift together the flour and baking powder.
Add sugar and rub in the fat. Beat the eggs with vanilla.
Add 23 of the eggs to the flour and bind to form a firm dough.
Roll out and cut into rings. Dip them into remaining eggs and then into the desiccated coconut.
Place on greased baking trays and bake at 3750 F for 15 to 20 minutes.
