Do You Miss Mugoyo? Try It With Cassava, Then

When many think of mashing anything with beans, the first thing that flies to mind is our grandmothers’ tested recipe of beans and sweet potato, to make mugoyo. But did you know you can use cassava instead of the potatoes?


2kgs cassava

frac12 kg dried beans


2 cups thin coconut milk

1 cup thick coconut milk


Cook the beans until soft.

Peel and slice the cassava and put them into the beans.

Sprinkle them with the salt and the thin coconut milk, cover and continue cooking until the cassava softens and most of the liquid is absorbed.

Mash with the thick coconut milk.

Continue cooking on low heat, stirring constantly until the milk is absorbed.

The mixture should be thick. Serve with any stew.
